Pasta with Vegan Chorizo

Ingredients
1 pack of Heura Chorizo
200 g of penne pasta
1/4 chopped onion
A pinch of dried oregano
2 minced garlic cloves
200 mL marinara sauce
Fresh basil
Salt
Black pepper
Extra virgin olive oil (EVOO)
Preparation
- 1Cook the pasta as indicated on the package.
- 2In a deep pan over medium heat, add a tablespoon of olive oil and cook the chorizos for 4 minutes, turning them constantly.
- 3Once the chorizos are cooked, remove them, and in the same pan, add a tablespoon of olive oil and sauté the onion for about 5 minutes.
- 4After 5 minutes, add the garlic and oregano, and cook for 2 minutes.
- 5Add a bit of the pasta water to deglaze the pan, then add the marinara sauce.
- 6Let it simmer for about 5 minutes, then add the pasta and chopped chorizos.
- 7Let everything cook for 3-4 minutes and finish by adding fresh basil on top.
